making macaroons

After my conversation with Arianna Brooks on my parenting podcast Mama’s Got This, I had to of course try my hand at making some of the tasty food items from the book. I was inspired to try making some macaroons with Q. They were super super easy – only requires 4 ingredients and something at the ready to clean-up your soon-to-be messy hands. Perfect activity for involving your little ones in the baking magic.

  • 5 cups coconut flakes
  • 1/2 cup granulated sugar (can scale back to 1/4 cup, if preferred)
  • 1/4 tsp vanilla extract
  • 3 egg whites

The only other thing you need aside from these four ingredients is some parchment paper. Preheat the oven to 325F as you mix the ingredients together. Once mixed, roll the mixture into mounds 1″ high and 1″ wide.

Place the balls around 1″ apart on the parchment paper on a baking sheet. Bake for 15 minutes or until they start to turn brown. So easy… so good!
